Qualifications
If you are a private chef or if you work someplace as a chef or sous chef or if you are just an amazing cook we would love to discuss having you as a guest chef at an upcoming Craft Pairing Dinner. Our standards are very high as are our quest's expectations so you really have to bring your A+ game.
We seek to bring the very best culinary talent that not only bring something unique to the table but also have a talent for plating and presentation. If you are know for a particular style of food - Bring it.
How we work with guest Chefs....
We customize our working arrangement with our guest Chefs based on the specific dinner.
- We keep the cost of our dinners at an affordable rate of $65 per person for 5 courses.
- We share the revenue generated from the sell of seats and we limit our seating to 40 guests.
- In some cases our guest Chefs provide their own plates and any special equipment they many need, while others ask us to provide plates.
- Most Chefs bring their own kitchen help, while others ask us to provide assistance.
- We provide glassware, silverware, as well as the beverages.
- We provide table set up and clean up.
- We provide service staff and bartenders.
- We provide a dishwasher that can also assist some on the line
- We provide the primary marketing and we manage the reservation process.
For each new chef that we work with, we first make sure we have an agreement in place that is fair to both parties and that provides a positive and collaborative relationship that translates into an excellent guest experience
Our Kitchen
Our facility is located at 302 S Jefferson Ave, West Jefferson, NC 28694.
This facility has been a full service restaurant since the 1970s.
It has been the home of Boondocks Brewing's Commercial Craft Beer Brewing operation since 2014.
Our kitchen is a large Commercial Kitchen with high food safety standards.
Our kitchen includes the following equipment
- Large Pizza Ovens
- Sautee Range
- Chargrill
- Fryers
- Convection Ovens
- Smoker
Our kitchen also has adequate space for plating, a large walk-in cooler as well as a large walk-in freezer. We have a high-temp dishwasher, heat lamps on the line and numerous small appliances that are available for use. We have a prep-sink and an assortment of kitchen cookware and utensils. We also have a full service Restaurant one block down the street if we need to "borrow" something on the fly.
