Our Philosophy/Our Recipe
- We believe that food is not just something that fills your stomach but also something that nourishes your soul.
- We believe that food is a Craft that you must have a passion for and exceptionally Crafted food should be celebrated and enjoyed with friends.
- We believe that exceptional food should be accessible to everyone and should not be viewed as an "elite treat".
- We believe that Craft food deserves to be paired with Craft beverages to include Beer, Wine, Spirits and Non-Alcoholic beverages.
Some History
Boondocks has always been a pioneer of new experiences in Ashe County.
- In 2012, Boondocks Brewing Tap Room & Restaurant was founded as Ashe County's first Craft Beer Brewery and West Jefferson's largest full service restaurant.
- In 2013 we launched our first Wine Pairing Dinners that were immediately a huge success
- In 2014 we launched the first Craft Beer Pairing Dinners to be held in Ashe County and we quickly learned the demand for this style of dinner was even greater than we thought.
- In 2019 we introduced the concept of a mixed Beer & Wine Pairing Dinner which received rave reviews, however, we had to take a step back due to COVID shutdowns and social distancing mandates
- In 2023 we re-launched our Craft Pairing Dinners using a Guest Chef concept at our Brew Haus Location.
- The last Wednesday of each month is the day that these dinners are held. We normally open the doors of the Brew Haus at 5:30 for registered guests for a little social time. The Dinner starts at 6:30 and normally lasts 2 hours. Each dinner is a little different so times are subject to change.

What is a guest chef?
Although Boondocks Brewing operates a full service restaurant, an events venue, a Brew Pub, a late night party venue, and a catering business, we also partner with local and regional Chefs which allows us to provide an experience to our guests which is more that we can provide alone.
Instead of promoting just what Boondocks Brewing has to offer, we promote what these Chefs have to offer even though often times they either work for or own a competing restaurant or catering service.
We call this coopetition as opposed to competition.

What is a Craft Pairing Dinner?
We use the term "Craft Pairing" instead of Wine Pairing or Beer Pairing because at our dinners, you have a choice of beverage with your meal.
We do use beer as the primary pairing guide as it is far more diverse and complex than wine, however, not everyone drinks beer so we also have Wine options available. For those that prefer to not drink alcohol or only want alcohol with a few courses, we have non-alcohol options available.
We also have Cider, Seltzer and Cocktail options available at most of our pairing dinners.
